I just find it so consistent. 240g of flour is always 240g. A cup on the other hand could ben just about any amount of flour you want depending on how it's packed. I want to be able to take density out of the equation.
Aaron, I use French cookbooks for the same reason. You know right away how much weight you've ingested once you have finished a batch of cookies.
